Strawberry Asparagus Salad

This light, refreshing salad is the perfect accompaniment to a spring dinner. Just add crusty bread.

Ingredients

1/8 cup Aunt Sue’s® Honey

2 cups asparagus, cut on the bias

2 cups strawberries, sliced

1/4 cup lemon juice

2 tbs vegetable oil

Directions

Place asparagus in skillet with water to just cover. Add pinch of salt. Bring to a boil and blanch for 2 minutes until asparagus is bright green. Then dip in ice water to cool completely.

Toss the asparagus and sliced strawberries together in a bowl.

Set aside.

In a small bowl, combine the dressing ingredients and mix well.

Pour dressing over salad and toss.

Chill before serving.
