Oven baked Sweet Potato Fries with Honey Mustard Sauce

Ingredients

Fries Ingredients

  • Four large sweet potatoes, thinly cut
  • 3 strips raw bacon, chopped
  • ½ cup canola oil
  • 2 ½ tbs Aunt Sue’s® honey (divided)
  • 1/3 cup deli style mustard
  • Salt, to taste
  • 2 tbs chopped fresh parsley

Dipping Sauce Ingredients

  • 1/3 cup deli style mustard
  • 2 tbs Aunt Sue’s® honey
  • Chopped parsley
  • Pinch of salt

Directions

  • Preheat the oven to 450 degrees.
  • Mix canola oil with ½ tablespoon honey. Toss the sweet potato fries and chopped raw bacon with canola oil and honey mixture.
  • Transfer the sweet potatoes and bacon to a parchment lined baking sheet.

To make the dipping sauce

  • Combine the deli style mustard, honey, chopped parsley, and a pinch of salt in a bowl.
  • Bake for 10-15 minutes or until golden brown. Remove from oven and let cool. Serve with the honey mustard dipping sauce.
